Assuming you’re going from DSL to DSL, it can be coordinated so that it might only be a few minutes (the two providers have to do that). If it’s cable to DSL or DSL to cable, just keep your existing service until the new service works.

Every time we (or I) have switched, we have the new service connected before the old is disconnected. This way there is only a few seconds interruption while wires are swapped around from the old modem to the new one…and it gives a chance to set up an email auto-reply to notify others that your email address has changed during the overlap (a month is a nice round number).
The one exception is when we went from Dial-up to Verizon FiOS I had to reconfigure my router before the Verizon tech got there so my home-network went down for most of the day. That was mainly because I had to disable DHCP since Verizon’s router has to be the DHCP server (it assigns IPs on both MoCA/coax and eithernet so the FiOS TV system can work and inter-communicate with the computers and internet)
